Shoppin’ In The Kitchen:

Effortless Walnut Taquitos:
Ingredients:
1. 1-2 cups raw Walnuts: Pulse in food processor or by hand.(Do Not over process, keep a little chunky)
2. 1-2 cans of black beans(rinsed & drained) or black whole beans if preferred.
3. 1 Large White onion or red(diced)
4. 4 Garlic cloves(minced)
5. Spice Mix: smoked paprika, cayenne pepper, cumin powder, onion powder, garlic powder, pepper, dried oregano, granulated garlic or garlic salt, (1-2 tsp of each depending on batch size)
6. Diced Jalapeño(Optional)
7. Corn tortillas or flour if preferred.
8. 1-2 tbsp. Tomato paste
9. 1-2 cups veggie stock/broth(depending on batch size)
10. Spray or brush with avocado oil(or omit if oil free.)

Directions:
1. Sauté minced garlic & onion for a few minutes(carful not to burn the garlic.)Until onions are translucent.
2. Stir in spice mix+tomato paste cook down for a few minutes.
3. Add crushed walnuts & black beans along with veggie stock to the pan and reduce until thickened.
4. Allow filling to cool down a bit(add diced jalapeño now if using) then wrap with corn or flour tortillas.*tip: place in a damp cloth or paper towel in microwave for no more than 30 seconds on each side before filling/rolling to make pliable.
5. Spoon a little bit of the filling & roll into Taquito seam side down.
6. Spray or brush avocado oil(or omit if oil free)
7. Bake at 450° F for 15-20 minutes, Air Fry or deep fry until crispy.
8. Garnish with Rachel’s Secret Garden Dairy-Free Quesó or pickled onions or your favorite salsa. Get creative!
